Hello to you,
If you are a subscriber to my newsletter, you will know that I promised a tasty soup recipe, so here it is ....
I have spent the last ten days in my happy place on an island in Scotland, and I am now back in rainy Manchester.
Tasty Soup Recipe
The first thing that I like to do when returning from holiday, is to make a huge pot of homemade soup. I was inspired by Johanna’s soup in Brewbaker on the island. If you are visiting the island of Cumbrae, then a visit to Johanna’s chocolate and patisserie shop is a must, everything is homemade and totally delicious.
Inspired by Johanna’s Vegetable and Ginger soup, I have concocted a version from what I could grab in the supermarket last night. Here is the recipe, nothing is too exact, and you can adjust the herbs and spices to your own taste.
Butternut Squash & Portobello Mushroom Soup
Ingredients:
Half a butternut squash, peeled and chopped
Two large potatoes, peeled and chopped
One punnet of Baby Portabello mushrooms – crumble these in, no need to chop.
Two large onions, peeled and chopped
One can of Cannellini Beans
Two tablespoons tomato puree
Two tablespoons of dried chives
Two tablespoons of dried parsley
Half a teaspoon of smoked paprika
Two tablespoons of chopped ginger
Two large tablespoons or organic bouillion
One organic vegetable stock cube
White pepper
Salt
Method:
Nothing is too exact (just like my art making!)
Chop all of the vegetables and put in a pan with boiling water to cover.
Add all of the stock powder, cube, herbs and spices, tomato puree, salt and pepper.
Boil for around an hour, then when everything is soft, cool and blend, I use a stick blender for rustic blending.
I didn’t add cream as I am trying to cut back after my holiday, ahem, but a dash of cream would be lovely.
